Vinification:
Manual harvest in boxes of 12 kilos, selection made in the vineyard, and again selected at the reception table. Pre-fermentative maceration with temperature control for 72 hours. Controlled alcoholic fermentation at 23ºC in small stainless steel tanks. The wine remains in small stainless steel tanks with its fine lees for 6 months.
Tasting Note:
Greenish yellow color, clean and very bright, subtle and attractive.
On the nose it is exuberant and very intense, very fruity, with hints of orchard fruit, light citrus touches, hints of nuts, walnuts and flowering pollen appear. On the nose it is exultant and enveloping, passionate and not tiring.
On the palate it enters with a lot of nerve, fills the entire mouth, is unctuous and reminds of a certain salinity, very long and intense aftertaste leaving a sweet aftertaste. Balanced acidity, it is a fresh, sweet and intense wine

Tasting Note:
The elegance of the wine is obvious with bright green tones, very clean and sparkling. On the nose, it is a very complex wine. It has a very, very fresh aroma, with a vegetable profile that gradually releases notes of ripe fruit such as peach. Aromas of ripe fig and banana also appear. Aromas that give it a complexity that envelops the desire to continue drinking and discovering. It never loses the feeling of freshness. On the palate it has a well-marked acidity and a long, endless finish, an exciting wine for our mouths, which awakens sensations that convey to us the excellent evolution of the wine. It is a gastronomic wine that will perfectly accompany any menu and that can last for a long time in the bottle.

Aging: 7 months in French oak barrels and 21 months of bottle aging in centenary cellars excavated in granite.

Production: 1,000 bottles
Vinification:
The harvest is carried out at the right moment of maturation, so that the grapes can offer their full potential. Exhaustive manual harvest in boxes of 12 kilos, with manual selection of bunches in the vineyard and again selected at the reception in the winery. Pre-fermentative maceration, going on to ferment in small stainless steel tanks. The wine aged in barrels.
Tasting Note:
Clean and very bright, golden yellow in color, which blends in with the greenish yellow that it retains from what it was before going through the barrel. The brightness is so powerful and present that the green flashes are sometimes confusing when combined with characteristics that subtly highlight the barrel. On the nose, its floral beginning surprises, above the barrel, it quickly evolves towards a very fresh vanilla flower. A spiciness of white pepper appears, very pleasant. Barrel perfectly integrated, resulting in an exuberant wine with great aromatic power. On the palate it is balanced, with body, structure and a lot of volume combined with its marked acidity. It has a very fruity aftertaste, essentially white fruit, like pears. Powerful and exuberant on the palate. It is a very gastronomic wine, appetizing with a wide variety of dishes. A perfect winter white.
