Variety Characteristics:
It is a variety of truncated cone-shaped, compact and homogeneous clusters. It offers high quality wines with completely healthy, delicate and very different clusters, always marking singularities unknown to the general public of wine. This variety has been present in Arribes for decades and decades, its cultivation was abandoned due to its late maturation, veraison beginning in many cases in September, this allows it to arrive in perfect health conditions at the end of October and even November for its vintage. Perfectly adapted to our Arribes terroir, it is totally different from its namesake in the Balearic Islands, making Bodegas Pascual Fernández the only one outside of the Spanish Levante and the Balearic Islands to produce this wonder.
Tasting Note:
Intense and luminous color, with very present polyphenols. At first it is a bit closed, but immediately it is discovered and it is intense, reminiscent of the fermented fruit of the vintage. The nose is exuberant, very singular, with a dry floral aroma, reminiscent of a bouquet of varied fruit aromas such as blueberry. On the palate it is very fleshy, with a very present acidity but very well integrated with the tannin, leaving a velvety mouthfeel and a cocoa aftertaste.

Ageing: Part in new French oak barrels for 8 months and part in a stainless steel tank for the same months.

Production: 3,400 bottles
Vinification:
Manual harvest in boxes of 12 kilos, selection made in the vineyard, and again selected at the reception table. Destemming and soft crushing, with controlled fermentation at 25º in small stainless steel tanks. The wine does not undergo Malolactic Fermentation and part is aged in new French oak barrels and part in small stainless steel tanks with its fine lees.
The barrels remain at a constant temperature of 12º and 80% humidity in centennial underground cellars, while the deposits remain at the same temperature of 14º in a controlled manner.
Tasting Note:
Ruby Red Color, characteristic of the variety, bright and elegant as well as intense and attractive. On the nose it transmits the exuberance that it will give us with very fine and elegant aromas of moss and fresh forest, with touches and evidence of wild fruits. And on the palate, it confirms the elegance, a meaty wine with very present but fine tannins, soft and with a very long sensation at the end of the mouth. Very Fresh, with clear, crisp evidence of fruit. A very sweet and "addictive" wine, very friendly on the nose and mouth and that does not let you stop tasting it.

Our Essence:
Made from grapes from 1857 ancestral vines located in the Villa del Vino, Fermoselle, in the D.O. Arribes. These grapes come from unique varieties that reach their maximum splendor here, unleashing an unlimited explosion of aromas and incomparable flavors.
Siete Peldaños represents a commitment of deep RESPECT for the land and our ancestors. When conceiving our project to create excellent wines, we always had the intention of recovering the rich history and winemaking tradition that has been part of this land for centuries.
Our essence lies in listening and learning from the land and from those men and women who have coexisted in harmony for generations, leaving us an exceptional land. In this land full of old vineyards, we work together with numerous viticulturists to explore their vineyards, selecting those that would be the base of our wines. We opted for the vines that showed the fullness of these minority varieties, contributing diversity to a wine panorama of incalculable value. However, we did not stop there. We carefully chose the vines from each old vineyard that reached the end of the vegetative cycle in optimal conditions. These vines managed to bring the clusters to perfect maturation, at a point where the aromas and flavors acquired an incomparable singularity. We flagged these culminating pleasure strains and added them to a "collection" honoring this land. This meticulous process was repeated on numerous plots, encompassing all the minority and historic varieties we found. We do not follow a pre-established criterion, but we let the land guide our actions, allowing the proportions to define themselves and the ripening of each vine to be dictated by nature itself.

JUAN GARCÍA

Varieties: 100% Juan García
Vineyard: Small plots with vineyards between 60 and 10 years old, located between 650 and 750 meters altitude.
Soils: Granite and sandy, originating from the alteration of the bedrock.
Alcohol content: 14.5% vol.
Harvest: October 8, 2021
Bottling date: July 2022
Production: 1,400 bottles
Vinification:
The harvest is carried out at the right moment of maturation, plot by plot, carrying out pre-fermentation macerations at low temperatures until the last plot is harvested. With this grape, the moment chosen is of the utmost importance, being a variety that in 24 hours can completely change its ripening state. Fermentation at a controlled temperature takes place in small stainless steel tanks.
Tasting Note:
Also known in the Arribes territory as Malvasía Tinta. Purple-red in color, not very intense, but bright, it is a wine from a variety that is the DNA of Arribes, cold as the granite of the soil. On the nose it reveals the intensity of the aromas of red fruits, sweet berries, very fresh, the elegance of a wine with little extraction is felt, with light tannins that end with a long finish of spices, such as cloves and white pepper.
